Blueberry and strawberry muffins


8 medium-sized eggs
200 g sugar
300 g semi-skimmed milk
200 g olive oil
300 g flour (type 55)
200 g whole wheat flour
2 tsp baking powder
100 g laminated almonds
250 g fresh blueberries
200 g strawberries


  1. Break the eggs into the bowl and add the sugar. Beat 1 minute on speed 3. Add the milk and the olive oil and mix for another 30 seconds on speed 3.
  2. Weigh in the flours and the baking powder and mix 30 seconds on speed 3. Add the almonds, blueberries and strawberries, chopped into pieces, and mix with the spatula. Pre-heat the oven at 180ÂșC.
  3. Pour the mixture into paper baking shells, previously placed on a muffin baking tray, but not filled to the brim, and bake for about 20 minutes.
