Piña colada


240 g white rum
200 g pineapple juice
300 g fresh pineapple, cored, cut in pieces, plus 6 slices with skin for garnish
35 g caster sugar
80 g double cream
80 g coconut cream
250 g ice cubes
6 cocktail cherries


  1. Place white rum, pineapple juice, fresh pineapple, sugar, cream and coconut cream in mixing bowl then blend 10 seconds on speed 8.
  2. Add ice cubes and crush 10 seconds on speed 6.
  3. Pour into glasses then garnish with cherries and reserved pineapple slices.
